Wine and Chocolate. Is this possible?

What is the best way to match chocolate with wine? Is it even possible pair the two?

Many people say that it is a very difficult combination, and some even say that it can't be done. However, if you have the right wine paired with right chocolate it can be truly delicious.

Chocolate and wine can work well together so long as you consider the sweetness of the chocolate when choosing the wine. Milk chocolate, with its high sugar content, requires wine such as port, sherry, or an Orange Muscat which are excellent choices because of their rich texture. The sherry will bring out the creaminess of the chocolate and the Orange Muscat will highlight the fruit tones that are present.

For a bitter dark chocolate the wine doesn't need to be sweet, it can have a slightly bitter flavour itself. Some good pairing examples are Cabernet Sauvignon, Zinfandel or even a high alcohol Sparkling from Barossa such as Seppelt Sparkling Shiraz. A Peter Lehmann ‘The Black Queen' Sparkling Shiraz 1998 is also an excellent companion for chocolate.

A good choice for lighter chocolate desserts is Moscato d'Asti DOCG (slightly sweet and sparkling).

Try by yourself and trust your palate and believe me, you too will realize that wine goes well with chocolate!!!
